When did you start your business?
Olivia Rose Confections began in 2013. I was at work one day and I made whoopie pies for a lunch box snack. A diner came in and liked them so much he order a dozen to take back to work. When I saw that they paid $33 for the dozen and realized the restaurant only paid me $11 to make them I started wondering hmmm maybe I should just make and sell these myself!
What made you want to make marshmallows and hot chocolate?
While I was in culinary school I worked part time at a restaurant to support my family. My days were long and the nights even longer. BY the time I got home I just wanted to relax with a warm cup of cocoa and marshmallows.
Yet culinary school had changed my palette and store bought marshmallows and prepackaged hot cocoas just wouldn't do anymore... I wanted to make a better marshmallow than a store bought marshmallow. With fresh ingredients and free of pork gelatin. And Hot Chocolate that was free of corn syrup solids, maltodextrin, starches, and artificial flavoring.
What's your favorite marshmallow?
That's not easy to answer. Thinking back over all the flavors I have made I found myself eating the inside out hot cocoa bomb marshmallows. The flavor and texture are amazing and I ate too many while developing the recipe.
What's your favorite hot chocolate?
Hands down the hot chocolate chai. It starts with this delightful chocolatey fudge like flavor and then there are pops on cinnamon, and then it ends with this heat of chipotle and star anise. It truly is a hug in a mug.
